DIRECTIONS: Transplant immediately into rich potting soil in a large pot (6 inch size or larger). Do not plant too shallow. Plant them as deep in the soil as possible (all most up to the leaves). Water well then keep the soil moist but not saturated (well drained). Keep in shade to part shade with bright indirect sunlight. Keep them potted for at least 2 months so the root structure can further develop. Outside planting is recommended only in early spring. If your soil is poor, mix it half and half with potting soil. Clusters of showy purple, blue or white flowers bloom throughout the summer. These flowers often attract butterflies. The foliage is a bright green, with serrated leaves resembling the shape of a heart. It enjoys part shade and grows best in between hardy zones 3 and 9. Easiest when grown in average, well-drained soils. This plant may be sowed if late fall or early spring. If favorable growing conditions, this little violet has the potential to spread rapidly. Self-seeding freely and reproducing from it’s rhizomes. EDIBLE: Violet flowers and leaves are edible with the leaves having a high level of vitamins A and C. They can be used in salads or cooked as greens. The flowers can be made into jellies, candied, or tossed into a salad. *Violet Jelly*Prep Time: 20 minutes. Cook Time: 0 minutes. Yield: Makes about 3 cups.Ingredients>> 3 cups fresh picked wild violet flowers (only purple flowers)>> 2 tbsp fresh squeezed lemon juice>> 3 cups organic cane sugar>> 2 boxes pectin (57 grams each)InstructionsPlace flowers into a bowl. Pour boiling water into the bowl until full (minimum 4 cups water). Stir to release air bubbles. Cover the bowl and keep it out of bright light for 24 hours.Line a colander with cheesecloth or a coffee filter and strain. The liquid will be dark sapphire blue.In a pan, mix 3 ½ cups of the violet liquid and lemon juice then bring to a boil and let boil one minute. Add sugar and pectin then bring back to a hard boil – then let boil one minute.Remove from heat and skim the top if needed. Place into sterilized mason jars, seal, and process in boiling water.
